Loison Easter Cake Colomba Classica
A traditional Italian Easter cake, Colomba is the spring time equivalent of Panettone or Pandoro. The dough for the colomba is Italian Easter cake from The Gourmet Shop made in a similar manner to Panettone, with flour, eggs, sugar, natural yeast and butter. However, it contains candied fruit peel and no raisins. The dough is then fashioned into a dove shape (Colomba in Italian) and finally is topped with pearl sugar and almonds before being baked. Beautifully packaged, the Colomba makes a great host or hostess gift.
